Strawberry Daiquiri

 

This summer has been absolutely bananas for heat. I am usually a steadfast pool-only-swimmer. If we’re at one of the Great Lakes, I’ll take a swim in those sand-bottom-no-seaweed waters. But usually, if I can’t see the bottom, I don’t like to get in. This past heat wave was so crazy at the cottage that even I jumped off the dock (praying my feet didn’t touch weeds of course).

 

​This recipe is one to help beat the heat. The slushy goodness can be made both with or without rum. The ingredients below make enough for two daiquiris, but if you triple you can blend up a pitcher without rum, then add the rum to the adult glasses so the tiny toads can cool off with a virgin version.

  1. Add monk fruit, strawberries, lime juice, ice, and rum (if using) to blender.
  2. Blend, pour into daiquiri glasses, and top up with bubbly water.
