Summertime Hard Iced Tea

Last summer, in between jumping in the lake and catching frogs with my kids at a friend's cottage, I whipped up this iced tea. It was popular with adults and kids alike (I made it without vodka for the kids!).
The longest part of this recipe is waiting for the tea to steep and then waiting for the tea to cool. But other than that, it's super quick and easy and perfect for summertime sipping!
- 2 Tablespoons Sweet Cheat Spoonable Monk Fruit
- 4 cups boiling water
- 2 Orange Pekoe tea bags
- 4 fl oz vodka
- Freshly squeezed lemon juice to taste
- Ice and lemon wedges for serving
Place Sweet Cheat Spoonable Monk Fruit in a heat-proof pitcher and pour in the boiling water. Whisk to combine.
Add the tea bags and steep 10 minutes. You want the tea to be fairly strong as you'll be diluting it with the vodka, lemon juice, and ice.
Remove the tea bags and allow the tea to cool before adding the vodka and lemon juice to taste.
Pour over ice and serve with additional lemon wedges.
