Strawberry Daiquiri

This summer at the cottage was absolutely bananas for heat. I am usually a steadfast pool-only-swimmer. If we’re at one of the Great Lakes, I’ll take a swim in those sand-bottom-no-seaweed waters. But usually, if I can’t see the bottom, I don’t like to get in. The heat wave at the cottage was so crazy... even I jumped off the dock (praying my feet didn’t touch weeds of course).
This recipe is one to help beat the heat. The slushy goodness can be made both with or without rum. If you blend up a pitcher, make it without the rum, then add the rum to the adult glasses so the kids can cool off with a virgin version.
Just blend ingredients with ice, top up with a splash of bubbly water, and enjoy!

Ingredients
- 2 - 3 teaspoons Sweet Cheat Spoonable Monk Fruit
- 1/2 cup strawberries
- 1 Tbsp lime juice
- 1.5 oz rum (optional)
- 1 cup ice
- carbonated water to top up
Instructions
Add Spoonable Monk Fruit, strawberries, lime juice, ice, and rum (if using) to a blender.
Blend to a slushy consistency. Pour into two daiquiri glasses and top up with carbonated water.
