Red Velvet Mug Cake

The very words "red velvet" conjure up something smooth and luxurious. This mug cake, with a cream cheese icing, does not disappoint!


  • 1 tsp butter, melted
  • 1 tsp water
  • 1/2 tsp vanilla
  • 1 egg yolk
  • 1 drop red food colouring
  • 1 Tablespoon Sweet Cheat Chocolate Milk Mix
  • 2 Tablespoons ground almonds
  • 1/4 tsp baking powder




Place all ingredients (minus the icing ingredients) in a small ramekin or microwaveable mug and mix vigorously until smooth (HINT: put the wet ingredients in first and the dry ingredients on top. This makes it easier to mix and prevents the dry ingredients from getting stuck in the bottom corners of the mug!)


Place ramekin or mug in microwave and cook on high for 50 seconds to 1 minute, or until cake is firm and dry and has started to pull away from the edges of the mug.


Allow mug cake to cool slightly while you mix together the icing ingredients in a small bowl.


Spread the icing over the mug cake and serve with fresh fruit.
