PB Chocolate Chip Cookie

Replacing the sugar, honey, or maple syrup you find in other mug cookies or cakes with Sweet Cheat Spoonable Monk Fruit cuts the sugar down from 30g to 10g; and if you use sugar-free chocolate chips you'll slash it even further down to 2g. Either way, you'll find this recipe gives you all the warm chocolate-chip cookie feels!
- 1 Tbsp butter
- 1 Tbsp peanut butter (use a sugar-free, peanuts-only peanut butter or nut butter of choice)
- 1.5 tsp Sweet Cheat Spoonable Monk Fruit
- 1 egg yolk
- 1/2 tsp vanilla
- 2 Tbsp mini chocolate chips
- 1/4 cup almond flour
Place butter and peanut butter in a microwaveable mug or ramekin.
Microwave on medium power for about a minute to melt the butter and soften the peanut butter (if you keep yours in the fridge like I do!)
Add in the rest of the ingredients and stir well to mix. Smooth out the top with the back of a spoon to cook evenly.
Microwave on high for 1 minute or until cooked through.
