Lemon Mug Cake

This mug cake is warm and comforting on a cool day, with flavours that will remind you of summer lemonade.

Ingredients

  • 1 tsp butter, melted
  • 1.5 - 2 teaspoons Sweet Cheat Spoonable Monkfruit (adjust as necessary for the sweetness level you prefer!)
  • 2 Tbsp ground almonds
  • 1/4 tsp baking powder
  • 1 tsp fresh lemon juice
  • 1/2 tsp water
  • 1/2 tsp vanilla extract
  • 1 egg yolk
  • 1/4 tsp lemon zest

Instructions

Melt the butter in a small mug or ramekin.

Add the remaining ingredients and stir well to combine.

Microwave on high for 40 - 50 seconds until firm and cooked through.

Serve with fresh fruit, and Sweet Cheat Vanilla Whipped Cream if desired.
